I'm jealous...your carb set looks very clean and maintained. Your build is coming together nicely. I had an '86 when I lived in Napa,CA. A tree fell on it and the kid sold it to me for$800! Not only that, the first time I looked for the parts I found an almost perfect set of tank and plastic for $225. Here's a couple pics:

We can't getb these in the UK. Any idea who may ship over from the US. Alternatively if you list the jet sizes and kit content I'm sure we could make some up over here

i bought Factory Pro needle jets for my TRX about a year ago from an ebay seller in England but I'm fairly sure Factory Pro will ship what you want for your FZ via their website if you enquired.

If you can't get them I will gladly work something out!
Also wanted to add this to the testing -
The Kit worked magic! But keep in mind I'm going to the K&N Pod air-filters because the kit does require much more air to work right. Even with the stock air box it was like Holy $hit! But after getting use to the new feel, as the bike heated up you can see how it's running rich on the upper end.
Just to test, did a ride with no air box and other than having to get the rev's up a bit more to pull out of first, less back pressure due to the V&N exhaust and the lack of an airbox, across the board the bike is a race monster!
So that said, if it rains a ton by you, go with the 1.0 kit and you'll still be able to get a ton of new power but with the added benefit of having an all weather bike. I just don't want to go into my carb again if I can put pods on, much easer and I live in the desert so water is non-factor.
Main reason ?? ->, 1.0 can be tuned up for after market exhausts with the air box but the 3.0 really like and needs to breath more than the stock airbox will allow.
